Swiss meringues

Week 6, session 1

I was really excited for this session. I’d not made meringues before and knew it could be tricky but one of my favourite desserts is pavlova so was looking forward to learning how to make it.

I didn’t nail it. It started out well but I incorporated the sugar too quickly so they “weeped” where there were sugar pockets and I had no icing bag so used a sandwich bag which didn’t really work.

However, they are quite tasty and will try again when the icing bag I’ve ordered has arrived and I’m onto session 2 – sugar syrups.

The shapes I’ve learnt are kisses, beehives, pavlova and spirals (although the latter is called something sounding like vesherem which I won’t be able to know for sure until I get the notes at the end of the week).
